Meaning "charred" in Japanese, this dish is made by over-heating lard in a wok, then adding miso paste or a special soy base, followed by chicken broth. It's then topped with chashu (BBQ pork), cabbage and a flavoured egg. One slurp of this and you'll feel like you're on the backstreets of Tokyo.
